Red Snapper Ceviche
Ingredients:
- 1 pound red snapper fillets, diced
- 1/2 cup lime juice
- 1/4 cup orange juice
- 1/4 cup diced red onion
- 1 jalapeno pepper, seeded and diced
- 1/4 cup chopped fresh cilantro
- 1 avocado, diced
- Salt and pepper
Instructions:
- In a large bowl, combine the diced red snapper, lime juice, and orange juice. Toss to coat the fish in the citrus juices.
- Cover the bowl with plastic wrap and refrigerate for at least 1 hour, or until the fish is opaque and "cooked" by the acidity of the citrus juices.
- Add the diced red onion, jalapeno pepper, and cilantro to the bowl and toss to combine.
- Season the ceviche with salt and pepper to taste.
- Serve the red snapper ceviche with diced avocado on top and tortilla chips on the side for dipping.
